ALMOND BUTTER NOODLES

Almond sauce

almond butter

handful long stem broccoli

handful mangetout
1
big handful baby spinach

portion of buckwheat noodles
I used King soba brand
Sesame seeds
Instructions
Whisk together all dressing ingredients.
In a wok or large frying pan, bung in broccoli + mangetout + 1/2 cup water. Cook till al dente and water has evaporated.
Meanwhile boil noodles to packet instructions.
Add spinach + sauce to wok. Bring to a simmer, add noodles. Stir till combined.
Pile into a bowl, sprinkle on sesame seed and dig in! Best eaten straight away.
