A spruced up version of the classic avocado on toast 🥑

Topped with Zaatar and toasted seeds to make it that bit EXTRA.

Nutritious, tasty and simple af. The perfect brunch to munch on!

Mixing through whole peas and spring onions into the avo pea puree gives it a nice contrast in texture.

HEALTH TIP If you were going to eat any kind of gluten bread, opt for traditionally made artisan sourdough. Not only does this bread taste better, but makes for a happier tummy. Made with just 4 ingredients and left to ferment for a few days; this helps break down some of the gluten, making it easier to digest and less harsh on your gut. ⠀

Ingredients

  • 1 Large ripe avocado
  • 1/2 + ¼ cup cooked peas
  • 2 tsp White miso
  • 1 tsp Lemon juice
  • 1 Spring onion, finely sliced
  • 2 tbsp Water
  • 1 tbsp Cold pressed oil, i used avo oil
  • Himalayn salt
  • 2-3 slices of toasted brown artisan sourdough bread

Topping

  • Toasted pumpkin, sunflower and sesame seeds
  • zaatar
  • Chilli flakes

Instructions

  • Keep back ¼ cup peas and the spring onion. Bung the remaining ingredients into a blender, and blitz till smooth.
  • Fold in the leftover ¼ cup peas and spring onions. Dollop on the toasted bread and sprinkle on the toppings.

Notes

Feel free to omit the oil in replace of an extra tbsp water to lower the fat and calorie content.
