These baobab infused appley energy balls are the perfect fuel to keep you slayin, grindin or for when you’re getting your sweat on.

Baobab is an African superfood. The fruit pulp powder has a slightly sour taste so rolling the balls in it as well as including it in the bites, gives it a nice tangy coating which pairs really well with the sweet appley middle.

APPLEY BAOBAB ENERGY BALLS

Ingredients

Balls

  • 280 g dried apple rings. Around 3 cups. Holland & Barett do a 280g pack
  • 1 cup pecans
  • ½ cup soft dates
  • 3 tbsp baobab powder, I used Dhow foods
  • 1 tsp vanilla extract

Topping

  • Baobab powder

Instructions

  • In a food processer, blitz the pecans to coarse crumbs.
  • Bung in the rest of the ingredients and blend till the remaining ingredients are broken down and the mix is mouldable.
  • Roll the mix into 1 tbsp size balls then coat in baobab powder.
  • BISH BASH BOSH

Notes

Store in an airtight container for up to a week. Or freeze on a tray before placing in a freezer container or bag. If you freeze them, the baobab powder will go wet when defrosted. Once thawed, re-coat.
