Rolled in coconut sugar and warm spices before getting kissed by the flames on the BBQ and a good glug of rum.

Coconut yogurt, passionfruit pulp, lime zest and designated coconut finishes these off perfectly.

Healthy never tasted so good. If there was anything to try this summer on the BBQ, its these 🙌

BBQ PINEAPPLE POPS

Ingredients

  • 1 Small ripe pineapple⠀⠀
  • 1/2 cup Coconut sugar
  • 1-2 tsp Cinnamon ⠀⠀
  • 1/4 tsp Ground ginger ⠀⠀
  • 1/4 tsp Pink Himalayan salt
  • 1 tbsp Coconut oil, melted â €
  • 8 tsp Dark rum ⠀⠀
  • 1/2 cup Unsweetened coconut yogurt, i used coconut collab
  • 1 Lime, zested
  • 2 Passionfruit’s⠀⠀
  • 1/3 cup Designated coconut ⠀⠀
  • 8 Wooden skewers, soaked

Instructions

  • Peel and core the pineapple. Chop into 8 long spears, give each one a brush with coconut oil. ⠀⠀
  • Bung the sugar, spices and salt into a bowl, mix till combined. Give it a taste and adjust spice amount- personal preference.
  • Tip the sugar onto a large plate, grab your first spear and roll to coat the outside. Insert a wooden skewer and put onto a baking tray. Repeat. Once all done pop the tray in the fridge for 20 mins to set the coating or until ready to BBQ.
  • Whack the skewers onto a preheated BBQ, grill till tender and nicely caramelised. About 4 mins each side. 2 mins before the end pour a tsp of rum over each- more if you like thangs boozy 😜⠀⠀
  • While that’s cooking make the yogurt dip. Put the yogurt into a serving bowl, top with passion fruit pulp and lime zest. â €
  • Time to get munching! Dunk the pineapple tips into the yogurt and sprinkle on designated coconut.
