Its super creamy thanks to the cashews and adding miso gives it a nice savoury umami kick.

5 MIN VEGAN QUESO

Ingredients

  • 1/4 Paste chipotle paste, I used Gran Luchito chipotle paste from waitrose
  • 1/8 tsp Cumin
  • 1/8 tsp Smoked paprika
  • ¼ tsp Garlic, minced
  • 1.5 tsp Lemon juice
  • 1.5 tsp White miso
  • 1/2 cup Water (If you can’t wait 24 hrs to try this out, use boiling water in replace of the cold water)
  • 1/2 cup Cashews soaked in plenty of water overnight

Instructions

  • Bung all ingredients into a small blender, starting with the lesser amount of water.
  • Blitz till smooth and creamy, adding more water if needed. The queso should be a pourable consistency.
  • Taste and adjust spice levels and seasoning if needed. It's totes on personal preference!
  • Feel free to add nutritional yeast to add a more cheesey flavour.
