TIRAMISU OVERNIGHT OATS

Ingredients

Porridge layer

  • 1/2 cup The Great British Porridge Co coffee oats
  • 1 cup boiling water

'Mascapone' layer

  • 1/2 cup cashews, soaked overnight
  • 1/4 cup coconut cream, chilled overnight
  • 1 tbsp lemon juice
  • 1/2 tbsp + 1 tsp maple syrup
  • 1/4 tsp vanilla extract

Other goodies

  • My sweet chickpea cappuccino and chocolate roasted chickpeas (i found them in asda)
  • Cacoa/cocoa powder

Instructions

  • Bung all the mascarpone ingredients into a blender and blitz till silky smooth.
  • Tip oats into a small bowl, pour boiling water on top and give it a good stir (don’t let it sit for too long otherwise it will be hard to layer/spread)
  • Time to start layering. Dollop in some of the oats, then mascarpone and a few cappuccino balls. Repeat till you get to the top of the jar.
  • Bung in the fridge overnight.
  • Sprinkle on cocoa/cocoa and some more cappuccino balls.
  • For best results take out the fridge 15 mins before diving in.
